Pumpkin Seeds

Leia and I went to Orange County this week to visit Mike. I convinced him it would be fun father-daughter bonding to pick out pumpkins and decorate them.

Turns out Leia is pretty skilled with a knife (haha). A Daddy pumpkin, a Leia pumpkin, and a white one for Kitty.

 

This meant lots of pumpkin seeds. I decided to try a little pumpkin pie spice and sugar. Yum!

 

You could toss them in a little melted butter or olive oil before roasting, but it’s not necessary. If you rinse the seeds, the moisture will help any seasonings stick to it. I bake them at 300 degrees until the edges brown, shuffling them a bit every 10-15 minutes. You want to dry them out, so low and slow is key.
